Pistachio Banana-Mango Smoothie

This was originally going to be a green-smoothie post…but I was out of kale or any green vegetable so enter pistachio nuts!  You wouldn’t think to put pistachios in a smoothie but they add a nutty and slightly sweet flavor that I love. This creamy vegan smoothie brings together the flavour of pistachio nuts with banana and mango; it’s actually kind of tropical tasting (which is always a good thing in the middle of January!).

This smoothie has 18g of protein if made with soy milk (11g with almond milk) which is a pretty awesome plant-powered way to start your day!  The 1/4 cup of pistachios  in this smoothie alone have  just over 6g of protein and are high in healthy fats, copper, magnesium, and B vitamins.


I first put the fresh blueberries on top of the smoothie to pretty-up my photos, but turns out they are actually really good mixed into the smoothie (almost like a bubble tea texture)!

This week I started (attempted) training for the 10K I will be running in May this year and 5K has never hit my body so hard!  I have no idea where that girl who was running at least 5k three times a week went to but I’m going to do my best to get her back.  I’ve only recently started running and love the solitude and sense of accomplishment it brings.  I ran my first 10k last year and was so proud of myself.  I find running outside especially rejuvenating but with the winter weather I’ll be hitting the treadmill this winter (wish me luck!).

Pistachio Banana-Mango Smoothie

Prep Time: 5min

Ingredients (1 serving)

  • 1 cup non-dairy milk (i.e. soy or almond)
  • 1 frozen banana
  • 1/2 cup frozen mango chunks
  • 1/4 cup pistachios
  • 1 tbsp chia seeds
  • 1 tsp maple syrup


1. Combine ingredients in high-powered blender (we recommend Blendtec)

2. Blend until smooth. Stir in fresh blueberries if desired.

    Oh what a wonderful combination. I have only just caught on to the smoothie trend and bought a smoothie maker, but I wouldn’t have thought of adding nuts. Pistachios are my favourites as well. I can’t wait to try this out.

      Thanks Norah, Hope you enjoy! I find adding nuts and seeds to smoothies is a great way to boost your protein intake. Walnuts are also great in green smoothies.
